La Biblioteca, the restaurant at Santo Mauro, a Luxury Collection Hotel, Madrid, is incorporating the hotel’s garden into its summer offering and joining the ranks of the capital’s leading dining destinations shaping the season. The venue, situated within the mansion that houses the hotel, allows the restaurant experience to be extended outdoors during the summer months, in a landscaped setting in the centre of Madrid.

The initiative responds to the growing interest in dining venues linked to luxury hotels, where cuisine blends with the surroundings, the service and the architecture of the venue. In this case, La Biblioteca expands its usual offering with the opportunity to enjoy lunches, dinners and gatherings al fresco, whilst maintaining the restaurant’s identity and the unique rhythm of the season.

Under the culinary guidance of Rafa Peña, the menu is built around a cuisine centred on ingredients, technique and seasonality. The offering features dishes designed to complement the warmer months, which can be served either inside the restaurant or in the hotel garden.

The dining experience begins with a selection of starters and dishes to share. These include crab and caviar salad, Palamós prawn croquettes and profiteroles with caviar and sour cream. The menu also features seasonal starters, such as tomato salad with lobster salpicón, grilled green bean salad with summer vegetables, traditional salmorejo, and Parmesan and caviar ravioli.

In the fish section, La Biblioteca presents dishes such as grilled lemon fish with white vegetable escabeche, grilled rock fish with glazed aubergine, and Roman-style monkfish with caviar, mayonnaise and salad. The menu is rounded off with dishes such as dry-cooked lobster rice, sirloin steak with tarragon-infused vegetable mirepoix, breaded lamb chops and free-range chicken breast stuffed with fine herbs and chanterelle mushrooms.

The dessert section stays true to the menu’s theme with dishes such as traditional torrija with salted caramel ice cream, peach and sweet wine salad, and cherry tart with vanilla ice cream. These creations round off a menu designed to align the dining experience with the summer season and the use of the garden as a natural extension of the restaurant.

With this opening onto the outdoors, Santo Mauro reinforces La Biblioteca’s role as a culinary destination associated with luxury hospitality in Madrid. The combination of cuisine, service and setting positions the restaurant within the capital’s summer offering, aimed at a clientele seeking dining experiences linked to the location and the season.
