Papúa Valencia, located in the Novotel Valencia Lavant hotel, will celebrate New Year’s Eve with a signature menu that focuses on local produce and Mediterranean flavors, priced at €195 per person, including wine pairing.
Under the direction of chef Juan Vicente Ballesteros, the menu takes guests on a journey through the land, sea, and grill with a sequence of dishes that reinforce the restaurant’s culinary identity. “Our philosophy has always been to respect the raw ingredients, commit to locally sourced produce, and let the flavors speak for themselves. For New Year’s Eve, we want our guests to enjoy a journey that celebrates the best of the season and our land,” explains the chef.
The menu opens with a selection of appetizers consisting of steak tartare rolls and matured picanha carpaccio with caviar; broken shrimp with pil pilates from their heads and garlic with the aroma of charcoal; and mini foie gras waffles with cherry jam and Pedro Ximénez. This selection is accompanied by H Blin Blanc de Blancs.


As the first main course, Papúa Valencia will serve grilled sea bass with pil pilates made from its smoked bones, creamy onion and garlic, fried artichoke chips, and baked potatoes, paired with Hacienda Calavia Colección Privada. Next, a lemon sorbet “Papúa Spritz style” acts as an interlude before the second course.

The second main course will be a Wellington sirloin steak with boletus duxelle and Joselito pork jowl, sautéed tender garlic shoots and snow peas, with a Pedro Ximénez toffee emulsion, accompanied by Hacienda Calavia Red wine.
The sweet finale comes with a chocolate sphere in textures on pistachio crumble and cremaet ice cream made in the restaurant itself, which sums up the house’s approach: technique, product, and attention to the season.
Papúa Valencia’s New Year’s Eve offering also includes lucky grapes, champagne, and a party bag. With this menu, the 800-square-meter restaurant consolidates its commitment to local produce, fire-based cuisine, and Mediterranean flavors in the urban luxury restaurant segment.
