Aguirre, a magnificent Donostian cuisine in the heart of Pozuelo de Alarcón

An unforgettable journey of flavours that takes us to San Sebastian through the palate

As soon as you cross the threshold of Aguirre, this charming Basque restaurant located in Pozuelo de Alarcón, its atmosphere takes you straight to Donostia. Its lively and bustling premises share the limelight with an appetising bar full of pintxos and the unmistakable aroma of its famous grilled txuleta. A charming restaurant far from the hustle and bustle of Madrid, which opened its doors in 2022 to captivate lovers of good food with a resounding concept of Basque cuisine that captivates everyone who visits it.

As soon as we arrive, we are greeted by its eye-catching bar that hides behind its glass cases small and irresistible snacks in pintxo format, among which its now famous ‘vitaminada’ gilda or its impressive homemade txistorra (Basque sausage) stand out. It is worth enjoying an aperitif before going to the table to get a taste of the essence of Aguirre. A simple and welcoming concept, where the most important thing is the quality of the raw materials used to prepare their exquisite dishes and the warm and friendly service that always makes us feel at home.

Once at the table, it is essential to try the impressive grilled txuleta. A kilo of beef, matured for forty days, which arrives from the Basque Country ready to make us fall in love with it. In addition, Aguirre has revived the tradition of the pintxo-pote, that Basque ritual that turns any evening into a party. Every Thursday night and Saturday lunchtime, the bar is full of tempting options in pintxo format that we can enjoy for just one euro and if we accompany it with a pint of Keler beer or a glass of wine we will pay two and a half euros. An original and very fun proposal, which is the perfect plan to enjoy with friends. Behind this beautiful project is Teresa Aguirre, a passionate cook who has inherited the love of good food from her grandfather, Víctor Martínez, former head chef at the legendary Hotel Londres in San Sebastián. A few years ago, Teresa decided to leave behind her career in marketing to change the course of her professional career and give life to this contemporary tavern with the soul of a restaurant.

Our evening at Aguirre began with their emblematic gilda vitaminada. A striking classic gilda accompanied by a delicious artisan vermouth from Extremadura that they serve in a small bottle in the shape of a vaccine, which is why they have called it vitaminada. A fun start, which led us to their famous pintxo Donostia, which is the most successful among their clientele. An entrepanes that they prepare in a delicate glass bread stuffed with torrezno (bacon) at low temperature, topped with a fried quail egg that is a real spectacle. We continued with some delicious cecina and baby squid croquettes. Both crispy on the outside, creamy on the inside and steaming hot, they were thoroughly enjoyed before going on to try a delicious pintxo of Russian salad prepared with prawns and topped with an impressive anchovy from Santoña. We couldn’t help but try the irresistible pintxo de txistorra, which led us to some exquisite grilled mushrooms fresh from San Sebastian, which they buy weekly and prepare with egg yolk. A canonical recipe that had us thoroughly polishing off the dish before moving on to some fun saam. They come in two varieties, prawn and beef, accompanied by yoghurt sauce and sweet and sour sauce. An original and refreshing option that is ideal for sharing. We finish by succumbing to the charms of the talo. A typical Basque dish that Aguirre prepares in its own way, stuffed with marinated meat and a secret sauce with hints of ginger and pickled onion. It is essential to try it before moving on to the final sweet moment. For dessert, those with a sweet tooth can’t miss the La Viña-style cheesecake, which we fell in love with, with its perfect texture and delicious flavour.

Aguirre, a charming family restaurant in Pozuelo de Alarcón where good food meets good living. A wonderful little piece of the Basque Country in the capital where a good atmosphere, a magnificent cuisine and an interesting liquid menu always await us… Because the philosophy of this house can be summed up as ‘good eating, good drinking and good living’.
