In an exercise of convergence between tradition, nature and craftsmanship, The Macallan presents the 2025 edition of its Harmony Collection in Spain, an annual series of limited releases that explore new sources of sensory inspiration. On this occasion, the Scottish firm has established a unique collaboration with JING, an international benchmark in single garden teas, to bring to life Inspired By Phoenix Honey Orchid Tea, a single malt whisky conceived from the aromatic character of an exceptional Chinese oolong tea.
The new release pays tribute to Phoenix Honey Orchid Tea, a rare tea grown in the Phoenix Mountains in Guangdong province, known for its floral and fruity notes and natural elegance. These qualities have served as the starting point for a whisky of remarkable complexity, crafted by The Macallan’s team of master distillers as a liquid interpretation of the world of tea.
Matured primarily in American oak casks seasoned with sherry, with complementary contributions from European oak and a subtle influence from ex-bourbon casks, the whisky has an aromatic profile marked by summer peaches and apricots, floral honey, tropical fruits, toffee and sweet oak. On the palate, it unfolds notes of fruit in syrup, warm citrus and a delicate vegetal astringency, with a fruity and lingering finish.
Beyond the product itself, the collaboration highlights a shared philosophy: respect for origin, terroir and artisanal processes. Both JING and The Macallan work with direct suppliers and control every stage of production, from the tea gardens and vineyards of Jerez de la Frontera to their own oak sawmills in the United States and Spain, building narratives that span cultures and generations.
As part of this alliance, The Macallan has also developed a whisky and tea pairing ritual inspired by the Chinese Gong Fu Cha ceremony, a traditional practice from eastern Guangdong focused on mindful preparation and shared enjoyment. This gesture reinforces the cultural and sensory nature of the collaboration, highlighting the affinity between two seemingly different worlds united by time, patience and craftsmanship.
The Harmony Collection thus continues its commitment to responsible innovation, incorporating organic and recycled materials into its packaging, in line with the house’s commitment to sustainability.
