Li-Onna: Wagyu and the Pleasure of Savouring Slowly

In the heart of Madrid’s Salamanca district, Li-Onna explores different ways to enjoy wagyu. From Kagoshima A5 beef to gyozas and sushi, Japanese delicacy meets the creative spirit of a restaurant with a Latin soul.

Sometimes we encounter flavours that invite us to pause the conversation for a moment. Our attention turns to a texture, the temperature of a mouthful, a taste that lingers after we have set down our cutlery. Wagyu belongs to this world of small discoveries: a beef whose richness reveals itself slowly, with precise cooking allowing its nuances to emerge.

At Li-Onna, the Japanese restaurant with a Latin soul in Madrid’s Salamanca district, wagyu appears across the menu in a variety of preparations. It takes the form of a simply presented cut, nestles inside a gyoza and finds its place in sushi. Each preparation offers a different way to experience its flavour, approaching the same ingredient from complementary perspectives.

The starting point lies in the character of the beef itself. Its intramuscular fat, visible in the pattern of its marbling, gives wagyu its distinctive silky texture. Much of its appeal lies here: delicacy and intensity come together in a mouthful that deserves attention, while careful technique preserves the qualities of the ingredient.

One of the most refined expressions of this approach is the Kagoshima A5 Wagyu. Served as a 100-gram cut, it focuses attention on the beef and its buttery texture. It is an invitation to appreciate the details and take time to savour what unfolds on the palate. The simplicity of the presentation has a clear purpose: to let the ingredient guide the experience.

From this starting point, the menu opens up to other combinations. The wagyu gyozas pair the beef with chives and ginger, accompanied by a ponzu sauce that provides a citrus counterpoint. In the pork belly and shrimp gyozas, wagyu adds depth to a more complex filling.

The journey continues with sushi. The wagyu nigiri takes a restrained approach, placing the beef centre stage. Its appeal lies in this economy of elements, drawing attention to proportions and the interplay of textures. It offers another way to appreciate the ingredient, with the delicacy of a single small piece.

The wagyu roll brings together a broader range of ingredients. Truffle aioli, mushrooms and roasted asparagus accompany the beef, while cucumber and chives add fresh vegetal notes. The preparation combines depth and freshness, alternating sensations that broaden wagyu’s flavour palette while keeping it at the heart of the dish.

Taking a different direction, the Li-Onna Wagyu Burger brings the same ingredient into a more relaxed setting. Gouda cheese, crispy bacon, roasted onion and wasabi aioli complete a burger in which tenderness, contrasting textures and a touch of heat offer another way to enjoy the beef. The format is familiar, while the accompaniments reflect the restaurant’s personality.

The experience comes together through this variety of expressions, rooted in Japanese cuisine and open to Latin American influences and contemporary combinations.
