In the heart of the Barceló Market, in Madrid’s lively Malasaña neighbourhood, hides Bistró Barceló, a culinary corner that breaks the mould and conquers palates. Located on the ground floor of the market, this small gastronomic temple is the dream come true of the charming Jesús García Almarcha, or Chuso, as his friends call him.
After leaving behind his career as a senior executive in a multinational in the technology sector, Chuso decided to pursue his true passion, cooking, and made a three hundred and sixty degree change in his professional career. After training at the prestigious Le Cordon Bleu school in Madrid and passing through renowned kitchens, this born entrepreneur gave life to his most personal project by opening a small gastronomic stall with a great essence.
Since its opening in 2021, Bistró Barceló offers an original and delicious gastronomic proposal that takes the form of an exceptional tasting menu made up of six courses, which change according to the season and which he prepares with the products he buys in the market itself. Every morning, the team personally selects the freshest ingredients, committed to a local and sustainable cuisine that always seeks zero waste.


This committed philosophy has been recognised with the 2024 Sustainability Award, as well as receiving a mention as a finalist in the ‘Restaurant with an Innovative Essence’ category from American Express. Added to this is the honour of having been named, two years in a row, as the best French bistro in Madrid by LUXlife magazine.
Diners embark on a journey of flavours where they can find surprising creations such as the exquisite scallop with leek and ginger, a delicious vegetable ravioli bathed in seafood sauce, or an original cocido madrileño with low-temperature egg. The menu closes with a dessert that fuses tradition and creativity, which in this case took the form of an irresistible creamy rice pudding with toffee and red fruits.
