Bivalvia Oyster Bar has just opened its doors to become a new sanctuary for those seeking an exclusive gastronomic experience based on the excellence of bivalves.

An unforgettable adventure through the best flavours of the sea awaits us in this cosy oyster bar located in the heart of Madrid’s Mercado de Diego de León, where we can savour a magnificent collection of the best quality bivalves. The menu of Bivalvia Oyster Bar is a solemn declaration of intent. A magnificent ode to the sea with an exquisite selection of oysters, mussels, razor clams, scallops, scallops and clams, presented in more than twenty different preparations, always with a focus on quality. Exquisite flavours of the sea that transport us directly to the French coasts and where their famous Aimé oysters always take centre stage.

Bivalvia Oyster Bar not only stands out for its selection of seafood, but also as a showcase for its legendary Aimé oysters. A French family business, led by Jean-Michel and his son Adrien, who have dedicated decades to the art of oyster farming in Marennes de Oléron, one of the most prestigious designations of origin in the world. With a deep respect for the marine ecosystem and a tradition that has been passed down from generation to generation, their oysters have the highest quality certifications, such as the Protected Geographical Area and the coveted Label Rouge.

To accompany this marine festival, Bivalvia Oyster Bar offers a select variety of white wines, ranging from fresh albariños to elegant godellos and pleasant verdejos. And for those seeking the sparkle of bubbles, the menu also includes cavas and champagnes that elevate the experience to its maximum expression.

Our visit to Bivalvia Oyster Bar began with some impressive Fine de Claire nº2 oysters that shared the limelight with some delicious Marennes-Oléron nº2 and nº4 oysters. A sensational kiss of the sea that with those unmistakable saline nuances gave way to the striking Fines de claire verte oysters with that characteristic green colour that has its origin in the algae on which they feed. We also tried the other Fines de claire de Normandie special gold which we tasted in two versions, No. 2 and No. 3. After fully enjoying this impressive festival of natural oysters, in their purist version, we went on to try the more daring versions, which took the form of exquisite oysters with a citric touch prepared with lemon foam, others with apple juice that are very refreshing and finally, our favourite of these three creations, which are accompanied by a touch of bloody mary that we found sublime. Our oyster festival continued with some fun oysters with jalapeño gazpacho that will delight spicy lovers and an exotic version seasoned with tiger’s milk. To finish with the oyster section, they surprised us with a tasty oyster Rockefeller gratin that is ideal for beginners in this field. We ended our unforgettable evening at Bivalvia Oyster Bar with some delicious French-style mussels, whose unctuous sauce invites you to dive in and to say goodbye, nothing better than succumbing to the charms of the Paloma cocktail, with a touch of grapefruit vinegar and a spicy touch that gave us the perfect finishing touch.
