La Fonda de la Confianza opened its doors in 2021, occupying the space that once housed El Olivo. Today, the beautiful project of the charismatic Paco Patón, who despite his professional success still describes himself as a waiter by trade, immerses us in an unforgettable gastronomic adventure characterized by four fundamental factors: essence, product, service, and affection.

Located at number one on General Gallegos Street in the Chamartín district of Madrid, stepping into La Fonda de la Confianza is always synonymous with enjoyment. A magnificent example of the best Spanish gastronomy, highlighting its exquisite pickles in addition to an appetizing collection of sublime preparations that are up to the standards of the most discerning palates.

The menu at La Fonda de la Confianza awaits us with wonderful stews, flavorful rice dishes, and its famous pickles, sharing the spotlight with the best seasonal products. A seductive menu that is constantly evolving, always based on the seasonality of the raw materials.

During our last visit to La Fonda de la Confianza, we began by savoring a sensational appetizer in the form of Maldonado Iberian sobrasada, which conquered our palate before succumbing to the charms of a spectacular vegetable pickle. An authentic gastronomic gem that elevates simple vegetables to another level.

We continue with a formidable foie gras and mushroom fideuá that is a true spectacle. A surprising recipe, with thin and al dente noodles, complemented by thin and crispy slices of mushrooms and tasty foie gras nuggets that made us scrape our plates thoroughly before moving on to try the delicious steak tartare prepared on the spot under the attentive gaze of the diner. A delight in every sense that culminated in the sweet moment of dessert, taking the form of a new addition to the menu, a delicious pear tarte tatin with vanilla ice cream. An irresistible homemade sweet that made us break our diet and fully savor its sensational interplay of flavors and textures.
