At the helm of the Intercontinental’s kitchen is its head chef, the incredible Madrid-born chef Miguel de la Fuente, who delights us with the new menu of the Intercontinental Garden restaurant. A menu with a Spanish foundation, very Mediterranean with international influences, where the embers complement the best seasonal ingredients. These delectable bites are best savored in a charming garden that’s ideal for combating the high temperatures.
During our summer visit to the Intercontinental Garden, we started by savoring impressive creamy croquettes made with carabineros (red prawns), kewpie, nori, and tobiko wasabi. These were followed by an exquisite grilled octopus leg with smashed potatoes and paprika from La Vera. A delightful bite that we enjoyed fully before surrendering to the intense flavor of charcoal-grilled avocado with king crab. A true spectacle that led to an exceptional grilled monkfish with pan-fried potatoes, thyme, and traditional Bilbao-style sauce. For the meats, we opted for the flavorful grilled beef tenderloin with country-style potatoes fried in olive oil and mojo picón, which led us to the anticipated dessert moment.
We chose to succumb to the charms of the roasted Golden apple on caramelized puff pastry. An elegant, sophisticated, and delicious dessert that was undoubtedly the perfect final touch for an unforgettable evening in this beautiful space, which we will return to soon to enjoy its iconic Sunday brunch.
