Sottosopra arrived in Madrid a couple of years ago, after winning over the Roman public. Located on one of the capital’s most exclusive and sophisticated streets, at number eight Callejón de Puigcerdá, stepping through the doors of Sottosopra feels like wandering into the charming alleyways of Trastevere and being seduced by the most authentic flavours of Roman cuisine.
The masterminds behind it, the Fedeli family, having opened a dozen restaurants in Rome, chose to continue their expansion across Europe by selecting Madrid as their next destination. The beautiful multi-level venue transports us to magical Rome, with marvellous wooden beams complementing stylish modern furnishings in a relaxed, informal setting that always encourages enjoyment. Additionally, the restaurant features a charming street-level terrace, perfect for gathering pleasant memories whenever the weather allows. It’s a delightful slice of Italy in the sophisticated Salamanca neighbourhood, where pets are also welcome, as it is a pet-friendly restaurant.
Our evening at Sottosopra began with an exquisite fiori di zucca, an irresistible courgette flower stuffed with burrata and anchovies in tempura – a true delight. This Italian speciality, rarely found in the capital, won us over with each bite. A sheer indulgence, which led us to the delicious asparagi dell’orto di Alberto Gómez with prosciutto crocante di Parma. These delightful fried asparagus from Alberto Gómez’s garden, topped with crispy Parma prosciutto and a vegetable cream, make for the perfect starter to share before the long-awaited moment of pasta.
We started with the robust and flavourful spaghetti tradizionali alla carbonara. This long dry pasta, made with guanciale, egg, and pecorino cheese, is cooked to a perfect al dente and arrives at the table at just the right temperature and texture. We also tried the impressive ravioli di burrata e tartufo, a dish that will surely bring us back to Sottosopra soon. This remarkable fresh pasta is filled with burrata cream and truffle, accompanied by a delicious sauce of fresh burrata infused with truffle reduction, which we eagerly mopped up to savour every last bite – an absolute delight.
For dessert, all homemade, we chose a delicious baked cheesecake – a perfect final touch to complete our unforgettable, Italian-flavoured evening.
