The amazing dishes at Los Aguachiles are taking the second Jorge Juan location by storm

Following the success of their first restaurant on the exclusive Velázquez Street, the restaurant continues its expansion in the capital

The warm reception of Los Aguachiles at its first Madrid location on Velázquez Street has encouraged its creator, Sinaloan entrepreneur Ernesto García, to continue expanding in the capital on the exclusive Jorge Juan Street. At its second venue, located on one of Madrid’s most sophisticated streets, they delight us with a seductive culinary offering that pays homage to the remarkable cuisine of the Northern Pacific and Northern Mexico.

Dishes that immerse us in the essence of authentic Mexican gastronomy, featuring the freshest fish and seafood in all their splendour. A culinary proposal that pays homage to aguachile—a traditional Mexican recipe that gives its name to the restaurants and originates from Sinaloa. This dish consists of prawns marinated in lime juice, seasoned with chillies and ingredients like Persian cucumber and onion. A delicious dish that, while reminiscent of ceviche, is not exactly the same. Both recipes use seafood cooked in lime, but their most significant differences are that aguachile has varying levels of spiciness, always includes chillies, and its main ingredient is prawn.

As can be inferred, the restaurant’s name is a true statement of intent, highlighting that Mexican cuisine goes far beyond tacos, burritos, nachos, and guacamole.

At Los Aguachiles, they introduce us to the gastronomic treasures of the Northern Pacific region—an area that includes the states of Sinaloa, Sonora, Baja California, and Baja California Sur, where an impressive mix of influences from various parts of the world come together, starring the finest seafood.

Leading the kitchen at Los Aguachiles is the experienced Mexican chef Antonio Guerrero, who takes us into the essence of authentic Mexican cuisine through delicious dishes that captivate the palate from the very first bite. An enticing menu that always starts with the finest ingredients, prepared with great care, to immerse us in the true essence of Mexican gastronomy.

Our first visit to Los Aguachiles began with eye-catching Rockefeller oysters, baked with cheese and an absolute delight. From their famous aguachiles, we tried both the black aguachile with prawns and the red aguachile with prawns. The latter was characterised by spicier notes that won us over as soon as we tasted it and led us to some incredibly delicious Baja-style shrimp tacos. This dish is best enjoyed with your hands and was followed by a refreshing mixed shrimp ceviche with touches of octopus, which is perfect for this time of year.

For the main courses, we sampled the tuna carnitas on a bed of guacamole—a robust dish with true Mexican flavour that concluded with the traditional corn bread. A perfect sweet ending that fully immerses us in the essence of Mexican cuisine.

Los Aguachiles, an irresistible slice of Mexico in the capital, now boasts two charming locations in Madrid. These two superb destinations, situated in the best areas of the city, transport us to Mexico through the palate with each and every one of their delicious dishes.
