Fidelio, the formidable Peruvian cuisine and cocktail bar in Boadilla del Monte

Last December, Fidelio opened its doors—a slice of Peru in the Madrid municipality of Boadilla del Monte that delights us with an enticing collection of delicious dishes and cocktails, offering options for all tastes. Located on the lively Avenida Infante Don Luis in Boadilla del Monte, as soon as you cross the threshold of Fidelio, you find yourself in a cosy venue where a great team of professionals is dedicated to immersing you in a flawless culinary experience brimming with flavour and expertise.

The creators of Fidelio, the married couple Alejandra Tefel and Daniel Flores, along with their partners Gerardo Martínez and Marco Frías, have taken great care to create a charming atmosphere that is perfect for families, couples, or friends. At any of their lovely tables, good times are always guaranteed as we embark on a journey to Peru through our taste buds.

Our evening at Fidelio began with their select signature cocktails. We tried a classic Pisco Sour and an original cocktail named Amazonía—a great way to kick things off as we ventured to try the exquisite Fidelio ceviche, which includes wild sea bass, a fun crispy baby squid, and tiger’s milk with hints of basil and spinach. This dish had great freshness and a vibrant, unique green colour, leading us to an irresistible trio of causas made with chicken, octopus, and prawns—a true festival of colours and flavours, perfect for sharing. We then succumbed to the charms of the delicious ají de pollo, made with yellow chilli, Parmesan cheese, purple potato, and violet olive cream. Without a doubt, the best-presented ají de pollo we’ve seen to date.

The highlight of the evening came with a juicy lomo saltado, made with Angus sirloin, tomatoes, and onions, all bathed in a soy sauce-based jus. A main course that is truly a culinary treasure.

To finish, we recommend trying their striking chocolate sphere filled with lucuma mousse, crunchy crumble, and exotic osmotised fruits. A bold dessert that will have you thinking about your next visit as soon as you step out of the restaurant.
