Tired of trendy restaurants where the main aim is to see and be seen, the chameleonic Emilio Carcur, founder of the iconic Thai Garden on Jorge Juan Street, surprised us three years ago with a novel concept focused on exclusivity and privacy. A magical space where one goes not to be seen, while embarking on an unforgettable sensory journey that transports us to the Land of Smiles through all five senses.

Located at number 13 Eguilaz Street, in the heart of Madrid’s Chamberí district, crossing the threshold of Diamantes de Sal Rosa means stepping into an unforgettable adventure that goes beyond the purely gastronomic. At its only table, seating up to eight guests, you can enjoy the highest expression of exclusivity, with an airtight privacy that is hard to find.

An innovative concept that breaks with the established parameters of the hospitality world, giving centre stage to the exotic creations from the kitchen, transporting us to Thailand with unmistakable aromas, flavours, and nuances that captivate the palate and intoxicate the senses.

Its creator, the extravagant Emilio Carcur, surprises us with an intimate and exclusive space, reflecting the impeccable taste that characterises all his projects. Perhaps Diamantes de Sal Rosa is the culmination of his restless mind, materialised in a small space that impresses with its spectacular floor: a stunning carpet made of a thousand kilos of Himalayan pink salt, complemented by delicate salt crystals hanging from the ceiling, giving the atmosphere a magical aura that fully immerses us in this unforgettable experience.

Diamantes de Sal Rosa also offers an impeccable Take Away and Delivery service for when you want to savour the delights of its kitchen at home. However, it’s certainly worth experiencing in person, with the exclusivity of having a restaurant all to yourself.

Our evening at Diamantes de Sal Rosa began with exotic peanuts seasoned with turmeric, a pleasant welcome gesture that led us to the golden bad appetiser: a crispy rice wafer filled with brie cheese, macadamia nuts, and melted cheese with a hint of red pepper. We continued with a delicious tom kai soup, slowly cooked with coconut milk, chicken strips, and mushrooms with Thai herbs—a true delight for the palate that led to the surprising Chorladada, an eye-catching pink dumpling made with rice flour and tapioca, filled with peanuts. A small yet rich bite that encapsulated the essence of Thailand, sharing the spotlight with seductive thai pearls, delicious scallops in a light ghee butter and coriander sauce.

The laab kai salad with minced chicken marinated in a sweet and sour sauce was light and refreshing, helping to cleanse the palate before moving on to the main courses.

First, we savoured exquisite scarlet prawns in red curry, with just the right amount of spice typical of Thai cuisine that we love so much, followed by a sensational and light monkfish served on a bed of steamed vermicelli. Finally, we enjoyed a tender beef tenderloin in red pepper sauce, which we relished from start to finish before succumbing to the charms of kao miao mamuang, a creamy Thai-style flan that won over our taste buds.
