Ascua Asador Contemporáneo, a new temple of fine produce in the exclusive Salamanca district

An elegant space where you can enjoy the magic of the grill at its finest

Ascua is the name given to this new opening, which will delight lovers of fine dining. An elegant and welcoming contemporary grill house that focuses on the quality of the raw ingredients showcased on its tempting menu, and its iconic grill which imparts a very distinctive flavour.

Located in the heart of Madrid’s exclusive Salamanca district, at number 91 Francisco Silvela Street, stepping over the threshold of Ascua means entering a comprehensive gastronomic concept that perfectly captures the passion for good cuisine.

Flavour, quality, and enjoyment perfectly summarise the experience that awaits at this surprising project, whose beautiful space has been meticulously designed by the Javier Erlanz Studio. A spacious venue with two levels and a charming terrace. Various spaces that adapt perfectly to every occasion, ensuring that we always fully enjoy our evening at Ascua.

On our first visit, which we are certain will not be our last, we began by enjoying some impressive grilled wild asparagus with a touch of extra virgin olive oil and salt flakes. A simple recipe starring this incredible seasonal product that needs nothing more to win us over. We continued with some delicious fried green peppers accompanied by exquisite Ascua pork cracklings, made following a traditional Chinese recipe in honour of one of its creators, the unstoppable restaurateur Roger Chen. A preparation that surprises with its delicacy and flavour. Crispy on the outside, extremely tender and juicy on the inside, they contain hardly any fat and make for a light and tasty bite, perfect for introducing us to the essence of Ascua.

The grilled artichokes we tried next, topped with crispy ham shavings, were delicious and led us to magnificent grilled razor clams and decent sautéed cockles, which on this occasion were smaller than usual.

Among the main dishes, the grilled monkfish caught our attention, seasoned with a mild Bilbaína sauce to not overshadow the formidable product, which was accompanied by a delicate bed of pan-fried potatoes that were delicious.

We ended our unforgettable evening with an irresistible homemade goat cheese tart that was truly smooth, creamy, and irresistible. The perfect final touch that bid us farewell with a wonderful sweet note, but not overly so.

Ascua wins us over with its passion for grilling and those impressive raw materials that meet the standards of the most discerning palates. An elegant and welcoming contemporary grill house in one of the best areas of Madrid where enjoyment and good times are always guaranteed. Something that makes us, as soon as we leave the place, already think about returning!
