Allégorie, a formidable French cuisine that pays homage to the art of sauces

In just one year of life, the restaurant has made it into the prestigious Michelin Guide

At number thirty-nine on Calle de Bretón de los Herreros, in the heart of the Chamberí neighbourhood, Allégorie rises majestically. Its name is a true declaration of intent that takes us into a seductive gastronomic proposal that delights us with the formidable cuisine of the young and renowned French chef Romain Lascarides.

In its culinary sanctuary of wooden tables and marble without tablecloths, the essential is on the plate. An elegant and minimalist atmosphere, where you can savour an impeccable recipe book, always starring magnificent sauces that serve as the main thread of the evening. The accompanied scallop with cauliflower and apple, touches of foie gras, almonds and truffle sorbet, takes us into an elegant waltz of elegant flavours, while the delicious Landes chicken with basil pesto and braised chestnuts is a sublime ode to autumn. A daring interplay of flavours and textures that will satisfy the most sybaritic palates, just like its magnificent foie gras or its exceptional desserts, the work of pastry chef Victor Bergerot, which stand out as true gastronomic gems. The irresistible pistachio éclair or the unbeatable inverted lemon tart are a must on the Allégorie menu.

Our evening at Allégorie began with a sensational beef tartare garnished with Cajun spice mayonnaise and crispy capers. A tasty and rounded recipe that led us to an exquisite white veal hip cooked in a cocotte and accompanied by an irresistible cream of smoked potato, mushrooms and parsley emulsion. A main course that we thoroughly enjoyed and which made us thoroughly wash down every last drop of its sublime sauce before ending the evening with an original grilled pineapple accompanied by coconut foam, pecan nut sponge cake and passion fruit. A delicate, original and light dessert that pleasantly surprised us and with which we bid farewell to this charming French restaurant until our next visit.

Allégorie, Lascarides’ reasonably priced haute cuisine is the perfect destination for those looking for more than just a meal. An unforgettable experience that transmits emotions and captivates us with a careful selection of sauces that elevate each dish to its maximum expression.
