La Moraleja, one of the most exclusive areas of the capital, has been the location chosen for the new business venture of the renowned chef José Carlos Fuentes. A perfect enclave that takes us into an exquisite cuisine characterised by tradition and creativity, which makes us part of the history of our country. Named in honour of the Marquise of Aldama, who at the beginning of the 19th century owned the land where the restaurant has opened its doors, this beautiful project is a tribute to this figure who was characterised by her elegance and generosity. A spirit that has been recovered in Aldama in order to introduce us to a formidable classic cuisine with soul and essence.
At the head of the Aldama kitchen, the prestigious chef with Catalan roots José Carlos Fuentes, with a career that includes two Michelin stars, takes us on an unforgettable gastronomic journey, where haute cuisine techniques blend with the most authentic flavours of Spanish tradition. An impeccable and resounding menu of traditional essence, where there is no lack of amusing nods to Japanese and Catalan cuisine.
We began our evening at Aldama with two great little nibbles as an aperitif. An exquisite country pâté and a crunchy toast topped with anchovies from L’Escala. A magnificent welcome that gave way to a surprising vegetable gargouillou on a base of pumpkin hummus. Visually dazzling, this dish brings together no less than twenty-two ingredients, bringing the best of the garden directly to the table. The experience continued with a perfectly prepared scallop, accompanied by fresh quince, black sausage and a delicate air of yuzu. The fusion of textures and the citrus touch made us fully enjoy every bite, before continuing with a squid from Isla Cristina that left us speechless. Presented in three versions: raw, grilled and stewed with xanfaina, each preparation offered a unique and memorable explosion of flavour.
Then, they surprised us with one of Fuentes’ famous spoon dishes. In this case, impressive beans accompanied by red prawns bathed in a deep escudella broth, garnished with thin slices of radishes. Every spoonful of this stew is pure pleasure. A perfect option to tone up the body during the cold winter days, which led us to an elegant wild turbot, served with spinach, a crunchy touch of kikos and a bottom made from its bones. The contrast of flavours, combined with the amusing point of the kikos, made this dish stand out for its originality. As for the meats, the Iberian suckling pig with melon and Gochujang was undoubtedly the star of the show. Juicy, tasty and with a perfect balance between sweet and spicy, this dish promises to be reason enough to come back.
The evening concluded with a dessert that embodies the essence of autumn. An original recipe made with lychee, sweet potato, chestnut and persimmon sorbet. Its sweet autumnal notes closed this gastronomic experience in a light and sublime way.
