Beyond culinary satisfaction, the objective is for guests to feel transported, to disconnect from Paris for a few hours and to live a complete journey from beginning to end. For me, UNI represents a holistic vision of hospitality, where cuisine, atmosphere, rhythm and service form a single, coherent experience.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>What prompted you to focus on Japanese cuisine in an intimate and refined setting in this part of the city, and what type of customer did you have in mind from the outset?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In Paris, accessing very high-level Japanese cuisine often means dining in traditional omakase restaurants, with limited capacity and a very codified format. I wanted to offer the same level of quality and precision, while creating a more convivial and flexible environment. Product quality, execution, atmosphere, service and rhythm are inseparable. If one element is missing or below standard, the experience is incomplete. Everything must work together naturally to create a fluid and immersive journey, without excess or artifice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>You manage several hospitality businesses; how does UNI differ from your other projects and what role does it play in your overall vision as a restaurant entrepreneur?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">UNI differs fundamentally through its culinary proposition. Beyond the immersive d\u00e9cor, it offers dishes that are truly unique and cannot be found elsewhere, alongside the essential fundamentals of Japanese cuisine. In my entrepreneurial journey, UNI represents an achievement, the synthesis of experience, maturity and a clearer vision of what a restaurant should be today.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Looking ahead, what are your main challenges and aspirations for UNI in the coming years, both in terms of the evolution of the menu and the experience, and possible new initiatives?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The main challenge is to continuously evolve the cuisine while maintaining an uncompromising level of quality. Creative renewal is essential to ensure that the dishes remain unique and exclusive. Growth or expansion will never justify lowering standards.
