For New Year&#8217;s Eve, we want our guests to enjoy a journey that celebrates the best of the season and our land,&#8221; explains the chef.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The menu opens with a selection of appetizers consisting of steak tartare rolls and matured picanha carpaccio with caviar; broken shrimp with pil pilates from their heads and garlic with the aroma of charcoal; and mini foie gras waffles with cherry jam and Pedro Xim\u00e9nez.
